Egg-citement, Break the Mould and Try These Tremendous Alternatives
Eggs. Get out the pan, crack them in and you’ve got a classic breakfast choice, popular in cuisines the world over. However, plain ol’ eggs can feel a bit monotonous when you’ve already been through your usual egg repertoire ten times – especially if your range is limited to frying, poaching, boiling or scrambling. There are plenty of other ways you can enjoy eggs, though, and we’ve rounded up a few ideas of how to add a little “egg-stra” something to the first meal of the day.
Eggs in Purgatory
Eggs are often part of a Spanish breakfast, but they tend to serve them baked in a simmering tomato sauce alongside peppers, onion and chorizo pieces. This dish has a number of names – such as Spanish Eggs in Purgatory – and varieties – such as a similar Mexican version called Huevos Rancheros and close relative Shakshuka, popular in the Middle East. There are plenty of recipes for you to make your own Spanish eggs in the morning so, although it might sound like hard work when you first get out of bed, it’s so worth it.
Eggs in disguise
Maybe you’re not a big egg fan but you know about their nutritional value, providing protein, vitamins, and minerals, as well as disease-fighting carotenoids such as lutein and zeaxanthin. In that case, go for a breakfast that contains eggs but not in a form in which you can recognize or even taste them. Eggs are a key ingredient in crepes and pancakes but, mixed into a batter and served with an unlimited variety of toppings, their eggy origins don’t really occur to you while you’re eating them.

The great thing about crepes is that you can turn your breakfast into either a sweet or savory delight. Do you like them piled with fruit and ice-cream and drizzled in chocolate sauce? Or do you lean towards a savory topping like creamy garlic mushrooms? If you’re having breakfast with friends or family, there’s no need to plump for one or the other – you can make or order a stack of crepes that everyone can top in the way they like best.
Decadent Eggs Benedict
If you want to make breakfast a romantic occasion and serve up something really special, you can’t go wrong with a dish like Eggs Benedict. This traditional American breakfast in its most classic form features lightly poached eggs served on a muffin and bedecked in Hollandaise sauce. However, the variations out there mean there’s almost no limit to their variations.
Gain some health benefits by serving your eggs atop smashed avocado. Avocado is said to be good for maintaining healthy cholesterol levels and it’s packed with vitamins and minerals that are good for your skin and hair. It also adds a great creamy texture and freshness to the dish.
